Roasted Balsamic Strawberry Ice Cream

Ice cream made with roasted balsamic strawberries for a sophisticated and tangy twist on strawberry ice cream.

THIS ICE CREAM. MAKE IT!

Last summer I made Roasted Balsamic Strawberries and was blown away. The balsamic vinegar with the strawberries is an unusual but totally meant to be pairing. It was amazing drizzled over vanilla bean ice cream, and I figured why not put it IN vanilla bean ice cream. Best idea ever.

This creamy ice cream starts off tangy from the balsamic vinegar and finishes of sweet with the taste of strawberries. It's creamy, dreamy, and delicious. It puts a nice little grown-up twist on the classic strawberry ice cream.

This time instead of roasting the strawberries in the oven, I did it on the stovetop and cooked it down into a nice thick syrup. The softened strawberries and all the delicious thick syrupy goodness go into the food processor and it gets pureed.

The puree is added to the vanilla bean ice cream base, and now you have a strawberry ice cream base!

It then gets refrigerated to cool and let the flavors develop.

  • 2 T. brown sugar
  • 1 vanilla bean
  • 2 cups heavy whipping cream
  • 1 cup milk
  • 1 cup sugar

Once it has thickened and the sugar has dissolved, pour the strawberry mixture in and mix it all together. 9. Transfer the mixture into a large sealable container and refrigerate until cool, a few hours or overnight. 10. Once the mixture has cooled or sat overnight, remove the vanilla bean and discard it. Then pour it into your ice cream maker and make the ice cream according your your mixer's directions. 11. Freeze for a few hours until hardened and enjoy!
