Banana Split Ice Cream Cake
I recently made my first ice cream cake, and knew that there would be many more in my future! I had the idea of making a Banana Split Ice Cream Cake, and have been dreaming up the possibilities for quite some time. I sort of wish I made 3, so I could create all the different decorations I thought up.... I even asked my friends on Facebook what their idea of the "perfect" Banana Split was. There are a lot of versions of them out there!
One thing was for sure- it isn't a Banana Split unless it has the whipped cream, SPRINKLES, and cherry on top!
With the summer coming to an end, and a new school year approaching, this cake feels right. It's the big summer send-off. The Ice Cream Social before the school year. Did anyone else do those as a kid?
It's one of those desserts where you get to dive in, head-first, and indulge. Forget the bikinis, skinny jeans, and tank tops. We're headed towards oversized sweaters, and stretchy pants. You deserve to pull out all the stops, and so does this cake.
This year, let's do it right. Kiss summer good-bye with the most iconic summer sundae there is. And don't forget the sprinkles.
It starts with a Banana Cake, which is topped in a layer of sliced bananas. Like where this is going?
Then it's coated in a layer of chocolate ice cream, then strawberry ice cream, and vanilla ice cream.
It's then drizzled in a fudge ganache. Topped with whipped cream swirls. Then come the sprinkles, bananas, and cherries!
All the wonderful flavors of a banana split wrapped up into an ice cream cake.
Chocolate Ganache Recipe:
3/4 cup whipping cream
2 cups chocolate chips (I used semi-sweet)
Put chocolate and whipping cream in a microwave safe container and microwave for 30 seconds. Stir. Microwave for another 30 seconds and stir. The chocolate should melt into the cream and after stirring enough it should all come together to create a smooth ganache. If it needs more time, microwave at 10 second intervals, stirring after each time.
What you need:
1 pint chocolate ice cream
1 pint strawberry ice cream
1 pint vanilla ice cream
chocolate ganache (recipe above)
Banana Split Ice Cream Cake Assembly:
First bake the Banana Cake in a springform pan, and letting it cool completely in the pan without removing it.
Line the sides of the inside of the pan with parchment paper. You want the parchment to be between the pan and the sides of the cake, and have it a few inches higher than the pan is tall. This will make the removal of the frozen cake and ice cream MUCH easier!
Once the cake has fully cooled, spread sliced bananas atop the cake to make a banana layer. Then spread on the chocolate ice cream layer and freeze.
***When doing the ice cream layers, the ice cream should be softened to the consistency of frosting so it's easily spread. Leave it out or zap in in the microwave to get it there.
Smooth the chocolate layer and freeze for at least an hour.
Repeat with the strawberry layer, and then the vanilla layer.
Let the cake freeze for a few hours, overnight is best.
Once ready to serve, drizzle in ROOM TEMPERATURE ganache!
Top with whipped cream, sprinkles and cherries. Use your extra banana slices to make a border around the bottom of the cake as well.
