I love how simple cobblers are.  An minimalist fruit filling, topped with a simple biscuit topping.   I don't think you can go wrong with cobbler.  Plus, there are tons of ways to switch it up! Nothing beats the warm and gooey filling with a light biscuit topping, paired with some ice cream. Summer is just asking for some! 

This blueberry cobbler is sweet and delicious.  The filling has lemon juice to kick it up a notch. The topping is light and brown sugary. So easy to make, you have no excuse not to! The perfect addition to your upcoming summer BBQ!

Blueberry Cobbler Recipe:

Filling:

3-4 cups. blueberries

1/2 cup sugar

≈2 tsp. lemon juice

1 1/2 Tb. flour

Topping:

2/3 cup flour

1/4 tsp. salt

3/4 tsp. baking powder

3 Tb. brown sugar

1 tsp. sugar

4 Tb. (1/2 stick) chilled, cubed butter

1 egg

1/3 cup whipping cream

2 tsp. vanilla

Directions:

Preheat oven to 350.

Grease a large pan, like pictured. 9x9 will work, just use 3 cups of berries.

Cover blueberries in lemon juice. Then stir in sugar and flour.

Spread berries over the bottom of the pan, and set aside.

In a medium bowl, combine flour, baking powder, and salt. Cut butter into flour mixture with a pastry cutter or a fork until the butter is about the size of peas. Then mix in sugars.

Whisk an egg in a small container and then add egg, whipping cream and vanilla into flour/butter mixture. Fold until the liquid is fully incorporated, but DO NOT stir any more than necessary!

Spread batter atop the berries, and sprinkle with sugar.

Bake at 350 for 30-35 minutes or until golden brown. 

Pair with some homemade vanilla bean ice cream and you're good to go!
