Are you a lover of all things pumpkin? If so, you're in luck! I've got a super easy recipe for Pumpkin Spice Cupcakes that will amaze your eaters! I personally have never been a huge fan of pumpkin flavored things... I know, I know, how can it be?! But don't worry, it's growing on me. Especially since I made these babies. Not too much pumpkin, just the right amount. They are perfectly dense, and super moist. Paired them with Cream Cheese Frosting, and you'll be in fall flavored heaven!
If you're like me, you've probably seen a similar recipe floating around Pinterest. You may even have it Pinned! I found that that was good, but they came out a little more like muffins than cupcakes. The added oil seems to do the trick to moisten them up a bit.
Pumpkin Spice Cupcake Recipe:
1 box Spice cake mix
1 15 oz. can of Pumpkin Puree
1/3 cup oil
Preheat oven to 350. Line 24 cupcake papers in pans. Whisk together oil, eggs, and pumpkin in a large mixing bowl. Add dry mix, and stir until combined. Scoop mixture into cupcake papers, no more than 2/3 full. Bake for 17-19 minutes or until a toothpick inserted comes out clean.
