Delightfully Chocolate Cake

Delightfully Chocolate Cake

The name says it all.  This cake is delightfully chocolate. It has a rich chocolate taste, moist texture, and a delicate crumb.  Not to toot my own horn, but, to toot my own horn, it's been described by many as "FANTASTIC".  You'll be dreaming about this cake, craving more... Or maybe that's just me. Whether it's in your dreams or a reality, you'll be sure to love it.

Delightfully Chocolate Cake:

Makes 3 8-inch rounds

2 cups flour

3/4 cup cocoa powder

1 tsp. baking powder

1 tsp. baking soda

1/2 tsp. salt

1 cup softened butter

2 cups sugar

2 eggs

2 tsp. vanilla

1 1/2 cup buttermilk

Preheat the oven to 350, and grease 3 8-inch pans.

Start by creaming together the butter and sugar on high until light and fluff, about 5 minutes. 

In a separate bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.  Once the butter and sugar mixture is light and fluffy, add in the eggs and vanilla, one at a time.  Beat well and scrape down the bowl after each addition. 

Add the flour mixture and buttermilk alternately, starting and ending with the flour.

Mix for 30 seconds more, to ensure there are no lumps. 

Divide evenly in to 3 pans, and bake at 350 for 20-30 minutes.
