S'mores Ice Cream Sandwiches
Toasted marshmallow ice cream sandwiched between two chocolate graham crackers. Basically s'mores and ice cream sandwiches had a baby. A DELICIOUS baby.
Somehow this summer went from feeling extremely long, to feeling very fleeting, as it always does. I had big plans of road trips and hikes I wished to do, and somehow in the midst of everything we've had going on (school planning, work, job searching, etc.), none of it happened! Well, we did manage to sneak in one spontaneous trip to Muir Woods, and a Giants Game, so I'm satisfied with that! I even made homemade granola bars for our hike, which my mom now thinks I'm a hippy for :).
As I feel the days of summer slip from my grasp, I'm trying desperately to hold onto any summer-y things that will keep this feeling a little longer. What is more summer-y than s'mores and ice cream? S'mores Ice Cream!
When I thought about making these, I knew they'd be good. But I had no idea how amazing and delicious the ice cream would be. I could not stop licking the spoon when I made this ice cream, it is, to date, the BEST ice cream I've ever made!
It starts as a basic vanilla ice cream base. Then you toast the marshmallows under the broiler in the oven. EXTRA TOASTY. Blend them into the ice cream base in a blender, and the rest is history. The toasted marshmallows not only give it sweetness, but an incredible depth of flavor. The caramelization of the marshmallows give a caramel-y/brown butter-y taste to the ice cream. It tastes toasty. And it's incredible!
You can make homemade chocolate graham crackers like I did, or just use store-bought ones. Heck, forget the graham crackers and just make this ice cream NOW! ;-)
The chocolate graham crackers are pretty easy to make. They end up tasting like chocolate cookies, or almost brownie-like. But they have honey, and whole wheat flour in them so they're somewhere in the middle of a crunchy graham cracker and a brownie cookie. What I'm trying to say is they're GOOD.

- 2 cups heavy cream
- 1 cup whole milk
- 3 egg yolks
- 1/4 tea. salt
- 1/3 cup sugar
- 12 marshmallows
- 1/4 tea. vanilla
- 1/4 cup all purpose flour
- 1/3 cup whole wheat flour
- 1/2 tea. salt
- 1/4 cup cocoa powder
- 1/2 cup powdered sugar
- 1/2 tea. baking powder
- 1/4 cup unsalted butter, cubed
- 2 T. milk
- 2 T. honey
